These spicy fritters are easy to make and packed full of flavour. Slightly crisp on the outside but moist in the middle, they’re a go-to supper favourite. This recipe makes 10 fritters.
3 Zucchini (Courgettes)
1 cup Chickpea flour (Besan)
1 tbs Coconut Sugar
1 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Chilli Powder
1 tbs Black Sesame seeds
1 tsp mild Curry Powder
2 tbs Coconut Oil
Optional – 1/2 cup of nuts or seeds, for more crunch
Coconut oil for frying
Grate the zucchini with a hand grater using the largest holes.
Mix all the ingredients together in a mixing bowl. Let the mixture sit 20 minutes in the fridge, then stir again.
Mold into fritters and fry with a little coconut oil oil. Enjoy with your favourite toppings and a green salad.
