Our delicious pesto is made with the traditional basil and olive oil. Instead of the usual pine nuts, try it with cashews or almonds for a slightly different take on this old favourite.
½ cup Virgin Olive Oil
1 cup Cashews or Almonds (or any other nut you desire, all create a slightly different taste)
½ tsp Salt
¼ cup Lemon Juice
2 Garlic Cloves
2tbs Nutritional Yeast
Put all ingredients together and whiz in blender, until smooth.
Keep in airtight container.
Note; Pour a thin layer of olive oil on top of pesto to give longer lasting qualities this helps to prevent oxidation .
