XMAS CAKE HO, HO, HO

Ingredients

Choose Organic ingredients to make a truly special nutritious cake

3x rind of 3 oranges (grated)

1 x cup of pitted dates cut up or figs or ½ and ½

1 x cup of cranberries

2 x cups of your favourite nuts

1 x cup of sultanas

1 x small cup of mixed peel

¾ cup of gluten free flour

½ tsp of rock salt

¾ cup of kombucha or orange juice

3 x chai seed eggs *30 grams of chai seed soaked in 90 grams of water

2 x tsp of gluten free baking powder

1 x tsp of cinnamon

1 x tsp of nutmeg

1 x tsp of curry powder

1 x tsp of vanilla essence

1 x tsp of almond essence,

1 x tsp of lemon essence

…and a splash of brandy if you wish!

 

 

 

Preparation

Line a 2 0cm spring cake tin with baking paper

Pre-heat oven to 120 Celsius

Put all ingredients into a large mixing bowl – mix well

Put mixture into cake tin and press down to create a flat top

Decorate with almonds and cherries

Bake for 2 to 2 ½ hours

 

 

Notes

I have also made these in small tins and large muffin tins as great little gifts

If you wish to do this, cut down baking time to around 1 to 1 ½ hours, depending on size.
